BARLEY AND RED DATE CEREAL WITH PINE NUTS

 

A favorite and versatile food recommended in our Dragon’s Way Qigong® program, Chinese pearl barley (also called Job’s tears or coix seed) has been proven to contain anticancer and anti-obesity properties. It is also very beneficial for skin and digestive issues. Chinese red dates (Da Zao or jujubes) also benefit the digestive organs and boost production of qi and blood. You can purchase Chinese pearl barley as well as Chinese red dates at your local Asian market

 2 cups Chinese barley
 10 cups water
 1/2 cup Chinese red dates, cut in half
 1/2 cup pine nuts

Rinse the barley and red dates well.

Add the barley to a pot and boil for 45 to 60 minutes.

Be sure to keep an eye on the cereal as the water can dry out quickly. In that case, add more water.

About 15 minutes before the barley is finished, add the red dates.

Spoon the barley cereal into a bowl and top with some pine nuts.

This cereal can be eaten over 5 days. For variation, add apple slices, raisins, cranberries, goji berries, walnuts, or fresh berries.
