 1 can bamboo shoots, drained and diced
 ¼ cup celery, diced
 ½ cup onion, diced
 ¼ cup fresh cilantro, chopped
 salt, to taste
 1 teaspoon mushroom seasoning
 oil for cooking
 1 teaspoon toasted sesame oil
 2 teaspoons sweet potato starch or corn starch mixed in small amount of water

Heat the cooking oil in a wok.

Add the celery and onions, stir briefly.

Add the bamboo shoots, cilantro, mushroom powder and salt. Stir fry for 1-2 minutes.

Stir in the toasted sesame oil.

Stir in the sweet potato starch.

Serve on a lettuce leaf, in pita bread, or over your favorite cooked grain.
