AVOCADO CORN SALAD

Avocados nourish the Lung and Large Intestine and help relieve constipation and that's only a portion of what this great fruit is able to do. The mint and oranges help to cool down the body.

In traditional Chinese medicine (TCM), avocado nourishes Yin and blood, benefiting the Liver and Kidneys, and also adding moisture to the Lung and Large Intestine. The corn strengthens the spleen and supports digestion.

 1 Avocado, diced
 1/2 cup of corn
 ½ Diced orange
 Juice of one lemon
 1 teaspoon of olive oil
 Salt to taste
 A few mint leaves chopped

Dice avocados in a bowl.

Add the corn. Option: Use frozen corn to the salad uncooked.

Cut the orange into bite size pieces and add to the avocado.

In a separate bowl whisk together lemon, oil, and salt.
Then drizzle over the avocado mixture.

Add the mint and gently toss the salad and serve.

For an extra treat, add the salad to a piece of toasted pita bread!
