Avocado and quinoa make a nice duo to support the Stomach and Liver function. You can double the recipe and enjoy leftovers!

 1 ripe avocado, peeled and diced
 1 lemon, juiced
 1 clove of garlic minced
 1/2 teaspoon of salt
 1 teaspoon of olive oil
 1/4 red onion, diced
 1 scallion, chopped
 1 cup of Quinoa prepared per the packaging

In a large mixing bowl, whisk the lemon juice, garlic, salt and oil.

Add the red onion, chopped scallion, and cooked quinoa. Mix well.

Add cubes of avocado and gently toss.

Feel free to top with your favorite green such as parsley, mint, or cilantro

Eat cold or at room temperature.

Keep your avocado's at room temperature. When moderately soft, cut in half and remove the pit. Now peel back the skin.
