ASPARAGUS WITH LEMON MARINADE

 1 bunch of asparagus, cut into bite-size pieces
 juice of 1 lemon
 2 Tablespoons fresh ginger, grated
 pinch of salt
 pinch of mushroom powder
 1 teaspoon lemon zest, finely sliced

Blanch the asparagus by placing it in boiling water for 10 seconds, and then removing it to an ice bath to cool.

Once cold, remove the asparagus from the ice bath and refrigerate.

In a bowl, mix together all remaining ingredients.

Toss the mixture with the asparagus. Allow to marinate for at least 30 minutes.
