ARUGULA RICE BOWL

Onions, fennel and leafy greens support the immune system. Onions in particular have been used in TCM to reduce coughs and help promote sweating. Eating them in versatile recipes is also a great way to promote healthy Lung function.

 2 teaspoons of oil
 1 teaspoon of salt
 5 mushrooms cut into quarters
 ¼ fennel bulb cut into 1/2 inch strips
 ¼ onion cut into chunks
 ½ teaspoon of mushroom Seasoning
 Handful of arugula
 1/4 cup of cooked rice
 Cracked pepper to taste

In a heated wok, add the oil and salt.

Add the mushrooms, onions and fennel.
Toss for 1-2 minutes or until slightly tender.

Add the mushroom seasoning after 1 minute of cooking.

In a bowl, add the arugula and warmed rice.

Place the vegetable saute on top.
Add the cracked pepper to taste.
