Aine’s Skillet Apple Crisp

Warm the digestive system with this delicious meal.  It's so good you'll want to munch on it as a snack!  The warming essence will support your body as we transition from season to season.

Ingredients
 3 firm sweet-tart apples, cored and chopped
 1 generous slice of ginger, peeled and finely diced
  cup walnut pieces
 4 tbsp butter, ghee, or coconut oil
 Pinch of salt
 1/2-2/3 cups quick cooking oatmeal (not instant)
 2-3 tbsp honey, or to taste
 1 tsp ground cinnamon

Melt butter or coconut oil in a skillet or wok. Add ginger and walnuts. Saute a minute or two, stirring frequently.

Toss in the apple chunks.  Sprinkle with cinnamon.  Stir to coat, then reduce heat and cover.  Cook for about five minutes until apples are al dente and their juices start flowing.

Sprinkle oats over the top of the apples; add a pinch of salt; then drizzle honey over the top.  Stir well.

Cover again and cook for 2-3 minutes until oats are cooked.  Uncover; stir again. Place in bowls with a splash of vanilla almond milk, if desired.
