AINE’S FAVORITE SOUP

This hearty winter soup is a versatile meal that can reduce inflammation and help resolve phlegm issues. Add additional spices for your own twist.

Yields1 Serving
 1 tablespoon of oil
 1 tablespoon of salt
 2 cloves of garlic, minced
 2 cups of winter squash
 1 cup of onions cut into 1 inch chunks
 1 cup of fresh tomatoes, diced (or an 8 oz can of diced tomatoes)
 1 teaspoon of minced ginger
 2 Tablespoon of pearl barley or other grain
 6 Cups of broth
 Pepper to taste
 Garnish with scallions, Thai basil or cilantro

To a large pot add the oil, salt and garlic.

Mix, then add the winter squash, onions, and tomatoes. Sauté for a few minutes then add the stock.

Add the barley, ginger and pepper.

Bring to a simmer and allow to cook for 30 minutes.

Use an immersion blender to make the soup somewhat creamy keeping chunks for heartiness.

Garnish with fresh chopped Thai basil, cilantro, or scallions.
