ACORN NOODLE SOUP

Acorn soup helps to resolve phlegm. In TCM it is used to support the Stomach, Spleen, Lung and Large Intestine.

Acorn squash is considered beneficial in Chinese medicine for nourishing the Spleen, supporting digestion, and promoting overall Qi (energy) circulation.

Yields1 Serving
 1 cup of acorn squash, diced
  lb of noodles
 2 teaspoons of salt
 1 teaspoon of mushroom seasoning
 1 tablespoon of butter
 1 teaspoon of coriander
 Mint, optional

Add the acorn squash to 5 cups of boiling water. Add the salt and allow to cook until the squash is tender (about 15 minutes).
Add the mushroom seasoning and coriander. Stir.

With an immersion blender, puree the soup.
Add the butter.

Next, place the cooked noodles in a soup bowl and spoon the acorn soup over them.
Sprinkle with some fresh mint.

Optional: For added flavor, grill half of a tomato and place on top of the noodles.
