ZUCCHINI STIR FRY

For crunchy zucchini, place the uncooked, sliced zucchini in a bowl of cold water with salt for 10 minutes before cooking. This helps draw out excess moisture, keeping the zucchini crisp when cooked

CREATIVE HARVEST MEAL

Instead of shopping for specific ingredients, take a little of this and a little of that from your refrig or market purchase.  We used one small eggplant, a handful of cherry tomatoes, four green beans, 1/2 yellow pepper, and a few mushrooms. Be creative! A great way to use leftovers!
