Eating for Healing: Thanksgiving Digestion Soup!
Cooking does not have to be complicated or difficult. Sometimes the task of preparing a meal can seem overwhelming, especially after one of the biggest meals of the year—Thanksgiving. Try preparing Grand Master Lu’s Thanksgiving Digestion Soup to use up those leftovers and give your digestive system some much needed rest.
Ingredients
Turkey juices and pan drippings
1 radish (Daikon preferred)
1 1/2 Tablespoons red wine vinegar
Directions
Warm the juices and drippings in a stockpot. Add 4-6 cups of water and bring to a boil. (The amount of water will depend on the amount of juices you have left over. Drippings are rich in fat and flavor, so add about 4 cups water for every 1/4 cup drippings.) Chop the radish and add to the pot. Cook for about 15 minutes. Right before serving, add the vinegar.
Use this recipe as the base and create to your heart’s content! Add leftover vegetables, noodles, or wontons if you’d like something more hearty, puree for a thicker soup, or add chopped scallions for color and flavor.
